3 Simple Recipes for a Virtuous January

Whether you’re dairy intolerant, going vegan or your New Year’s resolution is to eat healthier or more naturally, these three quick, easy and nutritious recipes will help you put your best foot – or fork! – forward in 2017…

There are evenings when everything goes like clockwork: your favourite song comes on in the car as the traffic moves breezily along, and you arrive home to a fridge and cupboards bursting with fresh fruit, vegetables and off-the-charts-nutritious dinner potential.

Then there are times when it’s not so straightforward – the evenings when traffic grinds to a standstill right outside the office, or the mornings when you get up late for an early meeting. It’s at times like this – your New Year’s resolutions to eat more healthily and cook more from scratch most at risk – when you need a quick, simple recipe in your back pocket, something to help you stay on track that you can literally whizz up and go.

MOCHANANA SMOOTHIE

This is a great way to be a little bit greener and make use of those bananas that are riper than you’d like by themselves: just pop them in the freezer when you notice them going that way and they’ll be there for you when that hectic morning strikes.

Once you’ve whipped up your doubly virtuous smoothie, simply pour it into a flask and, thanks to the espresso and 100% dark chocolate, you can take some get-up-and-go with you when you do just that.

What the chefs say: “Mocha-choca-nana, more like! Have it in the morning as a comfortingly thick smoothie or even have it for dessert. Either way it’s a guilt-free delight with a choc-coffee kick!”

Ingredients
2 very ripe bananas, cut into chunks and frozen
2 shots of cooled espresso
½ cup coconut yogurt
6 ounces Rude Health Coconut Drink
1 tbsp Hotel Chocolat 100% Dark Hot Chocolate
1 tbsp honey (optional)

Method
Simply blend all the ingredients until smooth and creamy.

COCONUT & CACAO MILKSHAKE

There’s something irresistibly exotic about this recipe that makes it the perfect escapist drink or dessert to get you through those grey January days.

Ingredients
1 cup of Rude Health Coconut Drink
1 tbsp Hotel Chocolat 100% Dark Hot Chocolate
½ tbsp raw coconut oil
½ tbsp organic coconut sugar
Pinch of organic turmeric
Pinch of organic cinnamon
Ice

Method
Just add all the ingredients to your blender and blitz.

SURPRISINGLY GOOD-FOR-YOU CHOCOLATE PUDDING

Having friends over and forgot to pick up dessert? Pop the sweet potatoes in the oven while you’re tucking in to the main course and you’ll have this simple, surprising pudding whipped up before the sparkling conversation is in full swing.

: “It’s amazing what you can turn sweet potatoes into. This chocolate pudding is a delicious treat!”

Serves 4
Ingredients

2 sweet potatoes
1 cup Rude Health Coconut Drink
⅓ cup Hotel Chocolat 100% Dark Hot Chocolate
3 tbsp almond butter
3 Medjool dates
2 tbsp honey (or substitute for 3 more dates)

Method
1. Preheat the oven to 190 degrees.
2. Roast the sweet potatoes in their skin for 25–35 minutes (until soft). Peel and place in your blender, pulse until puréed.
3. Add in all the other ingredients and continue to blend until super-smooth. You may have to stop the blender and mix with a long spoon if the mixture gets stuck beneath the blade.
4. Pour into your bowl, martini glass, champagne flute or whatever takes your fancy – the more glamorous the better! – and serve.
